I agree with both Nick and Greg. Does the skin boat have more room for float bags? If not it doesn't sound like a good boat to learn to roll in! With that much water in the boat can you use the method of lifting the bow to empty the boat like you describe in the article you wrote for Sea Kayaker? If not it seems hopeless for emptying out the boat in bad conditions.
