Bubbles in epoxy

I had problems like that once as a result of my vigorous mixing of the epoxy. Now I slow it down a bit and things go better. Another change I made was to use a less viscous epoxy. These both help. Although the temperature in the cellar is constant, you might try to heat the area and boat and allow temps to fall when epoxying.
I have also used a bubble roller when glassing. It is a roller with grooves that forces the glass to the wood and "pushes" the bubbles to the surface where your squeege can be used to remove the excess.
