I am working on my Great Auk in a plastic greenhouse I made. I have parts of the boat in different states of completion - some glassed, some not - and haven't had any trouble with the cold and humidity in Connecticut. I borrowed a heater so I could use some glue on the coaming and a crack developed on the deck.
I think you will be fine if you avoid any quick changes in heat and humidity.
