On my Guillimot, I used six or seven strips of ash just under a 1/16" thick x 3/4". I wrappped them all the way up onto the deck and later cut the shearline. The strips easily made the bend at the curve on the bow and stern with the use of a hot air gun. The ends on the hull were feathered into the light colored keel strips I used. On the bow deck the stem was again feathered into a light accent strip. It ended up looking like one continous strip. On the stern deck the ash came over dark cedar. Here I made an arrow point and feathered the edge down.
I agree with Mike, make the base a minium of 1/2" so you can get a good radius or sharper stem that is substantial looking. I would also run the stem three feet or more feet down the keel as this is where you get a lot of wear.
