Been there, done that except when I left mine I had only sealed the outside of the hull and was distracted for almost a month before I got back to doing the inside. I heard this giant cracking sound one night and rushed down to find that it cracked the hull in 3 places from curling up so much (it started looking like a cigar) Again those dry New England winters...
If you haven't glassed the deck yet you can probably use some straps to draw it a bit narrower to better fit the hull, thats what I had to do to get mine to fit just right. Your problem is nowhere near as bad as that though. Just get some sticks in there and you will be fine. It's amazing how much you can bend and twist these things when you need to.
(BTW: My wife has been paddling that boat for almost 8 years now with no problems...)
