How to avoid curling of the hull or deck

I am getting closer to finishing the stripping of the hull (Return). Joe Greenley instructions call for fiberglassing the outside of the hull first and then to strip the deck. Stripping the deck will take me somewhere between 2 weeks to 4 weeks. I am concered that I run into the curling problem due to moisture changes - I am working in garage. Tom Moore suggests the same, while Nick strips the entire boat.

I am planning on putting the forms back in, when I don't work on the boat.

Are there any thoughts on what the safest way to avoid curling problems. With fiberglass on one side, the hull won't be able to equalize any more.
