I am at about the same stage of construction as you ( guillemot single though), and couldn't agree more, planing a bevel on each strip is very tedious and time consuming. The next time will definitely be bead and cove at least for the hull.
No experience with the company at this link, but they supply bead and cove strips out of Prince Rupert, BC.
