I think a cabinet scrapper is by far the best tool for removing epoxy runs and bumps. It is fastest at 24 hours of cure time.
If you epoxy seal the wood before wetting out it is also great for shaving off the hardened sanding fuzz that pops up.
The fairing board is the way to go for smoothing the wood or epoxy.
