Spidey is right, but it won't hurt to do as you describe because as you already know, it'll give you fewer stray strands to deal with. I just finished my Arctic Tern a month ago and had similar concerns. I did have a few stray strands in the cockpit area but they're barely visible, you have to look pretty hard for them. I also made sure I overlapped it so when paddling my hands couldn't accidentally catch a sharp edge should one protrude, that is, the bow layer goes on last, over the layer covering the stern. Turns out it's really not that important anyway...I left the deck with just enough epoxy to wet out the cloth, and gave it a satin urethane finish. You can see some pics at
