double or single as first kayak?

I am about to launch myself into the world of strip-building kayaks. I eventually want to have three seats, in the form of one single and one
double. I am looking most seriously at Nick Schade's Guillemot L and
Guillemot Double to suit my needs.
Is there a compelling reason for doing one or the other first? Is one significantly easier than the other? While the double is obviously larger,
it seems the lines have less curvature than on the smaller boat, perhaps
making for an easier building process.
If you've built both kinds, I'd be interested to know the preferred order.
