I'd consider what you want to paddle first and then build in that order. I've built a single for my daughther, will be building another single for my wife, and will then build my own. (I should be fairly good at it by then! ;-)). The real reason is that neither my wife or daughter can solo paddle a canoe, which I can, so I get the last kayak.
So I'm building in order of need. It works for me.
I have noticed that a lot of the strip builders spend a lot of time on the coaming, a double gets you two coamings...
