Ouch! To come that far and be done in by chemistry. I admire your perserverance for wanting to start right back in.
I know of a method used for fiberglass boats. You build the kayak in one piece, but you put in double bulkheads. These bulkheads are bolted together with a spacer between them. When the boat is finished you saw it in three sections, with the saw blade running in the space between the sandwiched bulkheads. Install a gasket to make up for the saw kerf.
Maybe someone here has done this, there was a thread some time ago you could review. The only worry about applying this to a stripper is the potential for releasing residual stresses in the strips when the boat is cut, resulting in un-fair lines. You wouldn't know if it would be a problem until the boat was nearly finished, and, oh my, that does sound familiar, doesn't it? Never mind.
