I built all my work tables at the same height as my table saw because I don't have a lot of space so this way I can use my tables as in and out feed tables for the saw. I have my main 4' x 8' assembly table on wheels (locking) so I can move it around. I also have a 16' kayak strongback/assembly-support on wheels. Most of my large tools are on wheels as well. I also have several saw horses at the same height as my tables, again so I can put things together in different combinations as needed.
With the size space you have, being able to move stuff around may not be as important, but it can still come in handy.
I have a couple lolly columns in the middle of my basement shop which are a constant source of annoyance. Optimizing unobstructed open space will pay off if you are building long things like kayaks. This is one of the reasons I need to be able to roll stuff out of the way.
