I would put the paddlers center of gravity at the DESIGNED center of bouyancy. If you move the paddler back or fwd of it, the boat will rotate, nose up or down, to make the new center of bouyancy match the center of gravity. In other words, the center of bouyancy will always match the center of gravity wherever that is.
