I agree with Russ. Just about any yellow carpenter's glue is fine. If you're going with coves & beads you should have a tight glue line. This is where yellow glue excels. The joint will be stronger that the wood itself. If you're not, you may find that you have gaps in your joints. In this case you may want to go the extra couple bucks a gallon for "gap filling" yellow glue. Another sub-species is quick drying yellow glue which reduces clamping time. While yellow glues generally are not "waterproof," your plan is to encapsulate the wood and glue in a highly moisture resistant epoxy sheathing.
Epoxy will work if you just happen to fall across five gallons in the road. The disadvantages are cost, mixing time, pot life and sanding effort. With epoxy you have mix your two parts and then add what ever filler you need to make it thick enough to use as glue. Usually to peanut butter consistency. Then you've got to get it on the edge of your strip. Ever give a squirrel a peanut butter covered cracker and watch the sucker try to get that stuff off the roof of his mouth? You get the idea.
Which brings us to pot life. While you're trying to get this smooze on it's curing. You've gotta get it on, neatly, fit your new strip and clean up any excess before it kicks. When you're done you will have the unavoidable hardened squeeze out to sand or scrap off. When you come to fairing your hull, the process of knocking down the high spots, you'll have created a hard spot where you have to remove the most material.
Anyway, I must warn you that this hobby(?) is addictive. If you do fall upon that five gallons you've got enough for your next boat! Good luck!
