I have use pumps, balanced scales and diet scales measured in grams for weighing epoxy. My favorite and the one I feel most comfortable with is the diet scales. When you are mixing be sure you are scrapping the bottom and sides real well. But, two times I have seen the problem of epoxy not curing properly, go back to the company as their problem.
