I've never used it for a boat building project, but my experience in other areas (as well as what I've read here) is that it does not bond to wood nearly as well as epoxy, which actually functions as a glue. As a result, a polyester/fiberglass sheath is much more likely to delaminate than an epoxy/fiberglass sheath, which is actually bound tightly to the wood. The advantages of polyester are that it is cheap and that it does not need protection from UV light as epoxy does. While you can build a functional boat with polyester resin, I would not recommend it.
