I'm planning to use the bulkheads as hatches. We dobled up the thickness of the bulkhead and tried to cut the openings as large as possible. The front bulkhead is not going to be very accessible, so most of the time it is going to act more like an inspection port. The rear bulkhead behind the seat might be able to take smaller items and be easily accessible.
I have already glassed the inside of the kayak, taping all seams except in the cockpit area, where I chose to use 3.75 cloth across the hull panels. I still used 6 oz tape on the deck to hull joint. The cloth creates a nice looking grippy but continuous surface. Here I had the opportunity to learn about unraveling fiberglass edges...ugh. Thankfully those areas are not so visible.
