I used a double cove on my first Guillemot. I'm building a second and plan to do it again. It worked out great on my first and I actually think it helped in aligning the two halves when putting them together. Where you need to be careful is when you trim the epoxy coated glass. It is simply a matter of being careful, not really a big deal.
With that said, I have to admit I am still intimidated by the thought of planing the two pieces to match. So lets hear from someone who has done it both ways.
