Which Chesapeake? 16, 17, or 18? In general I think the QC will be more stable and turn much easier. The Chess will probably be faster, but the QC may be faster (top speed) than the Chess 16. Both will weathercock some, but the QC will be easier to correct with slight edging.
I take it that you want to build from plans, not a kit, is that why you are looking at these two kayaks?
