bow and stern entry lines and reglassing

When I built my Coho, I only did rounded bow and stern entry lines by not building up the epoxy extensively on the ends. By the time I added extra sacrificial fiberglass tape and epoxy on the bow and stern each was a rounded half inch surface. I am currently building a A.Tern for my wife and my son is building an Osprey HP. We are finishing the wiring stage. How do I build up the bow and stern and by how much to get a sharp entry line? Does this complicate the glassing process with a sharp edge? Second, I have sanded the deck on the Coho prepping for varnish and hit glass a little where the glass has high spots. Should I put another coat of epoxy and resand before going further?

I would appreciate any ideas or comments.
