Some of us are addicted to sanding. if it is smooth now, STOP !
You can varnish it next month, or the month after. In the meantime, finish any fittings and launch it. If it gets any dings from your first few outings you can fill those and sand them before the varnish goes on. Or, if it looks like there is a pattern of abuse (lots of deep scratches or dings from say, rocky shore landings or rough docks) you might want to add a few sacrificial patches of glass cloth as a grunge layer in these spots. It is easier to add this glass before you varnish.
