I used a variation of Nick's idea in my Guillemot. It's very comfortable, the angles are about perfect. The adjustment on mine is a cord and a jam cleat, and that works perfectly as well. It is good for an old curmudgeon like myself to be able to change leg position and prevent cramps and numbness on long paddles.

The downside is the inherent sloppiness and flexibility of the design. No matter how tight the tolerances are, adjustability requires some "wiggle room", so it just feels looser than sliding pegs. With this setup you can't "dance on the pegs", it just feels mushy.

As with everything, there are tradeoffs. This one has comfort, adjustability and low cost going for it, and even with the negatives I would do it again.
