Tony, When we were in high school we used to call these "pot-head" cutting boards. Use your imagination as to what that means.
The glue is Elmers. You can eat this stuff in small quantities and live to tell the tale.
As for the wood; Red oak is pretty, Ash is very white and a lovely contrast to one of the most beautiful of all woods, Walnut.
As for imparting off flavors in my food, Its a cutting board, not a plate and I'm not leaving food on it for very long anyway. Not to mention the flavor of olive oil I decided to use to bring out the glory of the wood.
One last note, I'm a Tabasco and Budweiser kind of guy, so I don't think I could even taste any off flavors. If you are looking for ideas on cutting boards you would do better to find someone who knows what the heck they are doing, because I sure don't I'm just an Electrician.
