I did a Tred Avon that way, by adding deckbeams and stripping to them. Then I glassed the outside, removed the deck, glassed the inside and assembled it. I stapled an extra sheer clamp to the outside of the hull, and clamped the deck to that with spring clamps. (deck was stripped a little oversized). Removing the temporary clamp and planing the deck edge left a flat surface for the rub strip which then covered the staple holes.

It worked well, and looks good. It's a little heavier that plywood might have been but that is mostly because of the fir I used in the deck. There is a pic on Joe Greenley's site but since he's moved my bookmark is dead.
