Probably THE bible for fiber-composite kayak builders is the "Boatbuilder's Manual" editted by Charles Walbridge. Menasha Ridge Press ISBN 0-89732-022-0 My copy is the 6th edition published in 1987. It compiles info from the days when almost everyone built their own (Charlie still builds his own). It has chapters on mold care and preparation, layup procedures, boat finishing, building safety, etc. Highly recommended before you build your first, especially the mold care issues - damaging the mold building the first kayak is a bad way to start.
The March/April issue of Paddler magazine has an excellent article on squirt boats and their pioneers
The November/December issue of Paddler has a short bio/article on John Sweet, a seminal whitewater paddler and builder who is still a good source of materials for kayak builders.
