Glass weight aside, I'd be concerned about busting-up the hull and deck by trying to fair the interior with no glass on the outside. You would really have to be confident in your glue joints, especially those end-grain joints. Usually, the deck is pretty flimsy with one layer of glass on the outside. With none, you'll have an accident waiting to happen.
