George is right about one thing,

Not only the wind effects weathercocking/leecocking so do waves.

Try to make small fixes which are reversable and try the boat again in severe (but controlled) conditions. try high wind in a shelterd place then large waves, try several headings.

Remember, maneuverablitiy may allow you to turn the boat quickly at crests of waves or breif calms. Adding a skeg will reduce this.
