Temporary Cockpit fill-in for fiberglassing ?

I need to think about fiberglassing now since my fairing and sanding will soon be finished. I have seen in pictures posted on the board, cockpits that were cut out before the decks were fiberglassed, were filled in with temporary fill strips. Is this necessary and why? Couldn't the epoxy be run to the edge of the cockpit and slightly over without fill strips? And, do you trim the green epoxy and cloth excess away before it cures? Thanks.
