I don't have any experience with non-sanding varnishes, but you don't need to sand between coats with any varnish unless it has been months since you applied the prior coat. If you just applied varnish last night or last week, you can apply your next coat without sanding.
You will generally get a smoother finish if you do sand, but if you don't have any runs or drips and the coat looks smooth, go ahead and apply the next coat without sanding. Sanding does make it easier to see where you are putting the new coat, but with good light you can usually tell anyway. You only need the rough surface for a good bond if the varnish is old.
