Just about anything can be made to bend if you cut it thin enough. You just need more laminations if you cut it really thin. If you give it a good coating with epoxy when you are done rot resistance is not a big deal.

Butternut is a lightweight hardwood and is less dense than many softwoods. A lamination of alternating pine and butternut would look cool.
