I think any plywood has decent exterior glue these days. The strongback should be ok if it doesn't get wet and is well supported. Big changes in temp and humidity can distort the wood strips of yr boat and this could be a problem at different stages such as when you have only one side glassed. It takes some time so not a big problem if you don't leave the project for too long and keep it on the forms and strapped in when you're away from it or during long periods of bad weather.
