It probably has nothing to do with the effect you are seeing but generally you hone a greater angle on top of the factory angle. I do it all by feel but (and I have my Wooden Boat magazine article on the subject here in front of me :) ) you could hone secondary angle of about 30 to 35 degrees in the blade and that may make it a more pleasurable experience for you.
