I'm going to be the bad guy here. I don't mean to offend others, but....well, I think it's sorta oversentimental to name a kayak.
But, you probably got the best advice from those who told you to do what YOU think is the best. If you're asking if you should name her/him/it you probably know the answer already.

That being said, however, the champagne over the bow thing, WAY too much man! Save it and have a nice drink to celebrate, once you have spent an amazing day on the water in a craft that you built with your own hands.

Enjoy your first paddle in her.
