Grain direction is as important as the type of wood used. Use vertical grain with no run-out, or at least no run-out in the paddle shaft area.

Greg, In which of these two axes do I want the vertical grain?

The grain runs down the shaft and inline with the blade width?

(stronger shaft?)

The grain runs down the shaft and inline with the blade thickness?

(stronger blade?)
