Ahhh... a new potential addict.
Unfortunately, your questions will not get definitive responses - differences of opinion and preference abound. Mine are:
Instant glue on a stripper is not a big problem - not as strong, but the primary strength comes from the fiberglass/epoxy sheath - no fatal problem in my opinion, but it would likely reduce overall strength - by how much???? But why instant glue anyway? Be careful of drips/stains - that stuff cures hard in my experience.
Keel strips seem to be rare, would add a little weight but give some ding protection, could reduce maneuverability, but add tracking - decide based on your intended use and preferences.
I have never heard of problems with any sort of cedar, as long as you can get clear stock.
