I think the problem with taildraggers is pilot induced oscillation (PIO), not actual stability. This can happen in a kayak as well. The pilot keeps trying to correct the attitude, put gets behind in the sequence, so that each correction makes things worse. If he just lets go of the controls (or relaxes) the vehicle will correct itself (definition of stability). That's what I would expect the bicycle-kayak pictured to be like, although apparantly they have that problem solved.
