I'm no expert, nor have I attempted this but I've read here that some folks have merely added one more center form and extended the length of the boat accordingly. That would minimize the movement of the cockpits from the double locations. The center cockpit, being for a child, could be stopped with bulkheads just fore and aft of the coaming as leg-room would not be a consideration. Maybe a couple of inches movement of the original cockpits would suffice. If and when the child is not accompanying you, you could have a hatch cover that would close it up for more storage or air-tight floatation. I don't think You are looking at any major construction changes, just a little added material costs.
I think that just moving the two existing cockpits enough to add another in between would put your larger cockpits into an area of the boat that is narrowing down too much for the original coaming size and possibly the original paddlers to fit properly wither seat or foot wise. ??? Just a thought!
