Greg, I haven't built one but from what I saw at the shop talking to folks it looks like you could be anywhere from 60-100hrs to go, finishing times are to a large extent a function of your skill and efficiency, sanding drips in other words eats up time. With the epoxy just make sure to wipe and sand before re-coating, because of all the exposed end grain plywood be sure to not sand through any finish coats of epoxy since the end grain can act like a sponge to standing water.
