I remember seeing an article about two years ago, when I first started looking at kayaks and found this site, where someone did a complere cover out of one piece, but can't for the life of me remember where or who.
I think I would reconsider on the canvas and go with one of the nylon/dacron or mix type fabrics. They would shrink more and you'd be able to work out the wrinkles much easier, and save a few pounds at the same time. Stick around and I'm sure someone out here can find a reference to what you are looking for.
If I may ask, why would you not want to cover in two halves? Seems like a lot of sewing rather than stapleing and more difficult to get flat and tight. Just curious.
