How much weight to effect handling depends on the boat. And what it will do to the handling also depends on the boat and where the weight is placed.

More weight sinks the boat further in the water, which tends to increase tracking and probably increase stability. But putting weight in the bow may decrease tracking, and putting weight high will decrease stability.
