Easy Rider Canoe and Kayak Company in Seattle makes great take apart boats. You can get good ideas from their material/publications. Their bulk heads are not very thick and heavy and work well.

In my next boat, I'm going to build in double bulkheads of 6mm plywood with just a saw kerf width between them. Them I can cut the boat after it is all finished and make it a three piece if I want.
