Try John Winters at Redwing designs. He sells mostly canoe designs to the general public, but I think he does the sprint boats as well. I am building one of his kayaks not (not a sprint boat) from plans I got from him.

One thing to consider is that while the Winters plans sold for home builders are quite detailed, plans done for commercial production or competition (like sprint boats) probably won't be. Green Valley Boats sells his plans.

The boat I am making now (a Q600) was designed for a manufacturer (QCC kayks). So, all I got was the lines and all the techie numbers you could imagine. The only one of those I needed was the LCB to tell me where to put the seat (and hence the cockpit) For the rest of the construction details you are on your own. You do get minimalist instructions. The reason I know he does sprint boats is that they are mentioned in the instructions.

Competition boats are another beast entirely, and they generally don't make good pleasure boats. I have had a couple of downriver racing kayaks over the years, and encountering waves anything but head on (which is what they were designed for) they were pretty wild. Once I paddled Hell's Canyon in my Lettmann Mirage, and I spent most of the trip bracing.
