I varnish areas in my cockpits that will be hit by sunlight. I guess it just depends on how many years you intend to have the kayak before the unvarnished glass inside would need repair.

I certainly have seen old strippers that didn't have varnished cockpits that needed the glass removed and repaired.

If you build it with care and treat it like it will be around for 100 years....
It will.
