Check out the Squeedunk Grebe. My nephew is paddling one and loves it. Grant Goltz of Squeedunk Kayaks is a great guy. Offsets for the Grebe are available at http://www.squeedunk.com/grebe1.htm

I haven't paddled it (don't fit), but my nephew did a fairly open water crossing (Point Defiance to Vashon Island, accross Puget Sound) in it the first day he took it out. He likes the kayak a lot. There was a positive review of it in Sea Kayaker Magazine a little while back.

A step up in size is the Pygmy Artic Tern 14, but is is only available in kit form.
