It's not a bad idea to let all the epoxy sit for a couple weeks before varnishing. It does continue to harden for quite awhile, and a little UV exposure wont hurt it. And of course, getting it wet is a good way to be sure all the blush is gone...

What I'm saying is to finish the boat, get the final fill coat on it, and then use it a little bit. Another advantage here is that you can modify the deck fittings before varnishing if you want.
