Hi Kirk, I have made some mistakes in my building adventures as well... That feeling you have of "no faith in your joints", will not go away. In fact, later you may regret not going back to replace them while it was still feasable.
It sounds to me like you didn't thicken the epoxy with wood flour. So, most of the resin flowed into the grain or out onto the floor. Consider redoing the scarfs. This time apply unthickened epoxy to each surface; then go back and smear peanut butter on each surface before joining them. You won't have to worry about them coming apart.
