In addition to Rehd's excellent comments on grain density, there can also be considerable variation due to moisture content. Sometimes you can actually see it ooze, but most often it's a little harder to tell. I've had redwood sawdust form a slurry as it was cut. Drying can show up hidden tensions in a board too, with a straight piece of lumber turning some interesting directions as it dries.
