I built the Cape Ann as my first boat, primarily in redwood. I went stapleless and no cove and bead. I'm unsure why you want to avoid steaming, it's very effective and saved a lot of grief with the clamps. If you're using 3/4" strips you might try shaving them down to 5/8" or even 1/2" The redwood was a lot easier to work with when it wasn't as wide. I used the bungies and the L-clamps and the spring clamps to hold the L's. I didn't find the spring clamps were strong enough and c-clamps are definitely more effective. The steaming was necessary only on the last 3-4 feet on the bow and stern and basically on the bottom half of the hull. Valclav's site has a page on pinched keels which was a problem on the stern of the Cape Ann. Unfortunately Vaclav came up with the technique after I had stripped most of the hull and I didn't have the heart to rip out a lot of hard won strips.
