Personal favorite is the Churchill River area in Saskatchewan for that type of fishing. You can obtain routes for about 50 canoe routes from either the Canadian Recreational Canoeing Association or the Saskatchewan government. They range from very challenging to flatwater. The areas are isolated ranging from no roads to fly in/paddle out to circular routes (you can paddle upstream on many parts of the Churchill about as easy as you can paddle downstream)to lodges. The fishing is so good I can even catch a fish (primarily pike or pickeral)and its not overcrowded (after the first portage you likely won't see more than one boat a day). Otherwise, most of Canadian shield is nice and made for paddlers. It may not be preserve but a lot of it is Crown land so it might as well be preserve. Further north you are into very long days this time of year so there is plenty of time to be on the water. Check lodges, provincial government activity sites or contact provincial canoeing associations (Canadian Recreational Canoeing Association site http://www.crca.ca/CRCACore.cfm also has a good library of books on different routes) or details about any of the areas. There are still lots of areas where you can spend your time and the only motor you will hear is the one on your plane as it flies away.
